Ingredients

  • 4 slices of sourdough bread
  • 2 cups of mixed mushrooms (like cremini, shiitake, and oyster)
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of fresh parsley, chopped (for garnish)
  • 2 tbsp of F+F Truffle Oil

Tips and Techniques

  • Ensure your pan is on high heat prior to adding your mushrooms to avoid mushrooms from getting a soggy texture
  • When cooking your mushroom try dry sauté your mushrooms and add butter and oil after the mushrooms have been sautéing in the pan

Directions

  1. Place the sourdough bread slices on a baking sheet and lightly toast them in the oven for about 5 minutes.
  2. While the bread is toasting, heat the truffle oil in a large skillet over medium heat.
  3. Add the mixed mushrooms to the skillet and sauté until they start to brown and become tender, about 5-7 minutes.
  4. Add the minced garlic, thyme, salt, and pepper to the skillet. Stir everything together and cook for another minute.
  5. Remove the toasted bread from the oven. Top each slice with an even amount of the mushroom mixture.
  6. Sprinkle the Parmesan cheese over the mushrooms on each slice of bread.
  7. Put the loaded bread slices back into the oven and bake until the cheese is melted and slightly golden, about 5-7 minutes.
  8. Remove from the oven, sprinkle with fresh parsley for garnish, and serve hot

Tasting

This recipe is perfect as the flavours can adapt to what you have in your kitchen. Add a depth of flavour by mincing up some shallots, garlic or thyme. Mix in a little sherry or white wine to add acidity.
