  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cups 2% milk
  • 1 bag Cavatappi pasta
  • 1 1/2 cups aged white cheddar cheese (shredded)
  • 1 cup Swiss cheese (shredded)
  • Scallions
  • Salt & Pepper (to taste)
  • 4 tbsp Farm & Florist Truffle Oil


Tips and Techniques

  • When melting the cheese in do it on a lower heat as to not burn the cheese  or get a gritty texture
  • Add cheese in batches slowly and to whisk inbetween before adding the next batch to melt the cheese evenly as well as achieve desired consistency
  • Make it your own by blending in other cheeses such as: Gruyere, smoked gouda or havarti


  1. In a large pot, fill with water and set to high heat. Season generously with salt. Once water comes to a boil, add Cavatappi pasta and cook for 8 – 10 minutes (until al dente)
  2. In a large pot, melt the butter (on medium heat.) Add flour and whist until combined. Add Milk 1 cup at a time, whisking in between to remove any clumps and achieve a smooth but thick consistency. (Until you no longer see any visible flour.)
  3. Season with salt and pepper and slowly add shredded cheese 1 cup at a time until fully combined.
  4. Stir in cooked Cavatappi pasta. In a folding motion, stir until pasta is evenly coasted with a cheesy mixture. Top with Scallions.


The pasta should be soft and tender to the tooth, with a creamy texture and strong flavours of truffle.
