Here is a refreshing recipe that features fresh vegetables, wrapped in rice paper, perfect for the summer heat.

  • Rice Wrappers
  • 1/2 ripe avocado (sliced)
  • 1/2 cup of carrots (julienned)
  • 1 -2 cups of lettuce (shredded)
  • Fresh basil or mint
  • 1/4 cup of red cabbage (shredded)
  • 1/4 of a cucumber


Tips and Techniques

  • Make sure the rice wrapper is soft, and don’t overfill with too much ingredients so that it’s easy to wrap.


  1. Dip the rice paper wrapper in luke warm water until it becomes pliable. (Quickly rotating the rice paper wrapper in the water for no longer than 2 seconds.)

  2. Lay rice paper wrapper flat away from you. (The rice paper wrapper will soften very quickly) Start closest to you evenly place lettuce, shreded red cabbage, sliced avocado, julienned carrots and cucumber evenly. (Leave about an inch on all sides) And finish filling off with basil or mint. (Optional)

  3. Take the bottom of the rice paper and wrap it up over the filling, and roll 1 full rotation. To secure the filling take the left fold, and fold it over the filling then repeat on the right.

  4. Roll and Repeat. Leave to the side and repeat with the remaining ingredients.

  5. Serve as an appetizer or have as a light lunch.


The Avocado Summer Roll should be soft to bite into, with a nice crunch from the fresh veggies.
